Provencal White Beans



The key to happiness (mine, at any rate) is simple pleasures, and nothing illustrates this better than haricots blancs à la provençale (Provencal-style white beans).  The ingredients are unassuming and the finished product wouldn’t excite a food photographer, but it is delicious, nutritious, thyme-scented contentment.  I used the recipe from this gem of a cookbook.  However, this dish, like ratatouille, is more of a general idea than a specific recipe.
