Ratatouille

Every time I’ve made ratatouille in the past, I’ve followed this method, where everything is cooked together.  It’s so delicious that I just keep going back.  This weekend I had time to make a more traditional version, where the vegetables were cooked first in batches and then mixed together.  I enjoyed it with a glass of white wine,  an issue of The Economist, and a deep sense of contentment.
