Southwestern Frittata



There were no good vegetable sales at Save-Rite this week.  I delved into my canned food cabinet for dinner, with the results pictured above.  Frittatas are excellent because they transform several discrete piles of food into “a home-cooked meal” without much time or effort.  A good dinner overall, though the poor quality of the Wal-Mart brand corn is sadly apparent.  I’ve gotten used to the good Del Monte organic stuff (as purchased on the cheap at the discount grocery).

Edited to add: this meal was decent when it was warm yesterday evening and absolutely fantastic at room temperature for lunch today.  Maybe future versions will go straight to the fridge overnight.
