You can’t win ’em all.  After the smashing success of the triple-chocolate cookies, these muffins can’t top “adequate.”  It’s my second foray into Smart Muffins, and I’m not terribly pleased with the results.  The texture is off; it’s almost like there wasn’t enough gluten development, which is opposite expectations for a low-fat quickbread.  Also, I really should have processed the carrots a bit more.  But carrots are cheap, and even lackluster muffins make a decent snack.

Edited to add:  these muffins were just about perfect after mellowing overnight.  Maybe I should wait and eat everything twelve hours after I make it.
