I had a few bites of a cajun dish called corn maque choux at a dinner out in Natchitoches, LA over Christmas. The memory has haunted me since, until eventually I realized, “I’m a pretty decent cook. I bet I could make that.” And one day, I will. Tonight I put most of my energy into crawfish pie, and threw together this side dish with canned corn and a quick cook on the stovetop. One day I’ll make it for real, with egg and fresh corn and plenty of TLC.
