Provencal Almond Cookies

This morning I found myself with a full pot of coffee, a book, and no biscotti.  Shameful!  Somewhere between lunch and my afternoon mug, I made these crunchy, lightly flavored biscotti-like cookies from my cherished Provencal Light book.  Coffee is my poison of choice, but these biscuits are mild enough for green tea, should you get the urge.
