Cookie Cake

I made another cake for Anion to enjoy, because no best friend of mine should eat store-bought frosting on her birthday.  Everyone like the ooey-gooey underbaked center of the first one, but I felt weird serving something that wasn’t fully cooked.  This time I used two whole eggs instead of the egg + yolk + 2 T milk combo in hopes that the extra protein would give the middle of the cake some structure.  It worked like a charm, and the center was soft while still qualifying as a “baked” item.  Anion thought the compromise was acceptable, judging by the state of the cake after our (comically devastating) rheology comp:
