Blueberry Corn Pancakes


So far the KAF Whole Grain Baking book has been hit and miss.  (Seriously, I don’t even want to talk about the box of oatmeal failure cookies currently on the counter.)  But this one is definitely a hit.  Imagine cornbread.  Sweet, tender, crumbly cornbread.  Now strip away the tangible frivolities and think of the essence of cornbread.  Got it?  Good.  Now, translate that essence into a pancake.  Add some blueberries.  And you’ve got a Sunday morning breakfast for the ages.
